i tweaked a recipe from the Favorite Brand Name Gifts From The Kitchen book--it's a format similar to my apple salad --<br />
<br />
in 3 T of oil start sauteing:<br />
<ul>
<li>2 chopped onions</li>
<li>1 tablespoon fresh grated ginger (no substitute)</li>
<li>1/4 teaspoon red pepper flakes</li>
</ul>
while you prepare and add:<br />
<ul>
<li>1/3 cup dried cherries</li>
<li>1 tablespoon sugar (1.5 teaspoon truvia, stevia etc.)</li>
<li>1/4 teaspoon salt</li>
<li>1 cup liquid (water, broth, wine, fruit juice or combination)</li>
</ul>
cook five minutes then add:<br />

<li>1 chopped apple</li>
</ul>
cover & cook 6-8 mins until the apple gets tender--i like to leave it in the pot with the fire off and the cover on for 15-mins--it will keep cooking and it gets all vintage looking browned--<br />

stir together in separate mixture:<br />

<li>1 teaspoon cornstarch in tablespoon water</li>
</ul>
stir into apple mixture-- boil softly for two minutes--turn off fire<br />

wow this is good with ham and pork but i eat it on toast--so good--great on a cold morning--has great blend of nice heat from the ginger and pepper flakes with soft sweet fruitiness --<br />

mini frittatas, aka egg cups, aka crustless quiches<br />

was inspired by the "<b>gluten free 3 books in 1" </b>page 98 their 'cheesey quichettes '<br />
<br />
these are mini frittatas--egg cups--crustless quiches--you can 'make up' any combinations of veggies and cook them in the eggs and viola--store in the fridge or perfect to stack up in the freezer for well planned 'fast food'<br />
<br />
<ul>
<li>10-12 strips of bacon fried crispy & roughly chopped</li>
<li>half an onion chopped & sauteed in some of the bacon fat</li>
<li>a medium unpeeled zucchini, shredded fine</li>
<li>6 eggs </li>
<li>1/2 cup sour cream</li>
<li>5 ounces of goat cheese crumbled</li>
<li>seasoning, salt, pepper, garlic powder</li>
<li>2 teaspoons of hot pepper flakes</li>
<li>1 cup of minced "spinach made easy" see the first recipe in the blog (bottom of home page)</li>
<li>1/4 cup cooked potatoes shredded--i used about a dozen formerly frozen french fries--sweet potato would be great</li>
</ul>

instructions:<br />

<li>into a good sized bowl beat the eggs</li>
<li> add the sour cream and blend well</li>
<li>take the shredded zucchini by handfuls and squeeze out the liquid into the sink and add the drier zucchini to the egg mixture </li>
<li>add the spinach--</li>
<li>whisk to incorporate everything--</li>
<li>add the rest of the ingredients--</li>
<li>stir to combine </li>
<li>place into 12 lightly oiled muffin cups</li>
<li>bake for 15 minutes at 400</li>

<li>4 tablespoons (which is 1/4 cup) gf 'flour' (optional) -- i used two tablespoons each of coconut flour and gf panko crumbs-- next time i will toast some oatmeal, food process it to make a meal and use that--something to help bind it up a bit and that will absorb some moisture hence the toasting first--but can be made without flour</li>
<li>chopped or shredded half onion</li>
<li>salt pepper</li>
<li>food processor</li>
<li>aluminum foil approx. 18 x 18</li>

place the cauliflower and onion into the food processor and process, scrape down until it is all a fine mash--probably need to do two loads--spread it out on a pan* and bake for 20 minutes at 375-- remove from the oven and turn the mixture over with a spatula--return to oven for 20 more minutes (this is to burn off some of the moisture) --let cool--no worries if it browns a bit--<br />
<br />
*i am using a full size sheet pan to spread out my cauliflower/onion mash so mine is a thin layer and 40 minutes total is perfect for evaporating enough water from the cauliflower--so adjust this for the size of pan/s you are using--i'd recommend using an aluminum foil oven liner** pan for best results -- just line it with aluminum foil so you can re-use it --<br />

when cooler (just so that it does not cook the eggs) place back in food processor with eggs, flour mixture, salt, pepper-- process and scrape down to well incorporate --<br />

for toppings--i cooked down a can of crushed tomatoes till it was half the original amount--added some garlic, basil, sugar, salt until it was nice & thick--i also blanched a large tomato--dropped it in ice water so i could peel it--then sliced it and removed all the watery bits and spread that out with the cooked down crushed tomato paste in between the slices, added cooked italian sausage and a lot of cheese--roasted garlic, cooked down minced spinach, peppers--you name it!<br />

<li>add all the ingredients into the beaten egg and whisk--will not look like curd--no worries</li>
<li>the object of the game is to microwave the mixture and whisk well before repeating the process until the mixture becomes thick</li>
<li>this will require <b>three 15-second intervals</b> whisking well after each to get the butter melted</li>
<li>then <b>two to three 30-second intervals</b> whisking well in between to get the mixture cooked into a curd--perhaps another<b> one to two 15-second intervals if needed</b>--whisk well at each interval</li>

i'm just saying don't <i>stay</i> deterred by this ;) march it back to the store like i did for a refund--and try another one--stevia is an acquired taste as they say--i had to work at 'acquiring' ;)<br />

the truvia baking product packaged in the green & white bag with the clever little green cap says it contains sugar but apparently it is of enough 'different' composition that it is not impacting my ability to loose weight-- and while not a perfect sweetener, and not without it's own side effects and issues it is helping me have treats and supply good* replacements for how i would normally eat--how i like to eat--<br />

*<i>good</i> as in --doesn't make me start gaining weight or craving sweets and in fact i can still drop pounds while 'indulging' in a lovely satisfying treat from time to time<br />

i'm a happy escapee from food lockdown ;)--i've escaped the sugar cell block where i'm obese and can't fit through the cell door and the other where i'm locked in the food dungeon far away from crunchy chips and baked goods--vital facets of a free and happy food life pour moi--<br />

because of the science behind sugar consumption and how our bodies store or burn fat to me is like a train that goes one way or the other but not both on a daily basis-- i know that for me switching and using stevia and truvia products enables me to avoid white sugar--sugar now tastes way too sweet--<br />
<br />
i am using the brand "sweet leaf" stevia--it's a very fine white powder in a small plastic jar that sweetens my coffee now that my taste buds have adjusted--<br />
<br />
...and before long i will be testing some recipes using ground raisins and other dried fruits for sweeteners--has to be used carefully so the train doesn't hit the turnaround!<br />

preface this list with what i do eat is a typical responsible diet -- greens based salads, mayo based egg or tuna or chicken salad, proteins including sausage sometimes, veggies, eggs, cheese, butter & yogurt, some fruit -- no brainer type foods for health -- all the dairy might be unusual but i'm loosing so it's working--so it's not exactly low calorie or low fat but it's especially devoid of more than 99% white sugar and 98% wheat flour.</div>

1.) especially when i began my diet i kept my sugar calories under 100 a day --got the idea from author jorge cruze when he was on tv promoting his book "The 100"--he said to multiply the carb count of sugary items by 4 to get the sugar calories--typically i had fruit like either 1/2 cup blueberries or an apple, or a third or half a banana--</div>

2.) i weigh myself all day long--i love to do this and i've learned a lot--i can tell when i'm going to drop a pound and what went right to get there--i can accurately predict my weight fluctuation throughout the day--and i'm not discouraged when it goes up and down--that's normal--a scale that registers half pounds is good a scale that registers tenths of a pound is even better.</div>
