skinny GF un-muffin

the key to success is to slice the single serve muffin like a baby pumpernickel bread!



this is my interpretation of  "the skinny muffin" from "The 100" by Jorge Cruse

key to success here is to slice the muffin as if it were bread -- it's like a nice pumpernickel ;)
gluten free, single serving, microwaves in a cup easy peasy--


very very easy--

beat an egg for about 100 strokes in a coffee mug then combine all the rest of the ingredients and microwave for about 45-50 seconds 

¼ cup ground flax
1 teaspoon baking powder
2 teaspoon cinnamon powder
1 teaspoon coconut oil
1 egg
1 packet Stevia/Truvia/Swerve

variations:

>>> Blueberry Skinny Muffin--I just stirred in a handful of blueberries and let it cook for about 70-75 seconds. A quarter cup of blueberries is about 15 sugar calories.

>>>Chocolate Skinny Muffin One--chop up and stir in about 1/4 of the 86% chocolate bar approx .75 oz. which uses 30 sugar calories--I did need to sprinkle on an additional packet of Truvia after cutting it into four slices.

>>>Chocolate Skinny Muffin Two--instead of 1/4 cup of the flax meal use 3 tablespoons flax meal plus 1 tablespoon of cocoa--cook as normal--cut it up into four slices and sprinkle on another packet of Truvia -- plop on some sugar free whipped topping--wow you have a lovely sinful-seeming dessert. Add the chocolate bar bits or not.

>>>Baking Powder Idea--Since there's a whole teaspoon of baking powder in the skinny muffin you can easily make your own single action baking powder instead of using the aluminum based double acting baking powders by combining 1/4 teaspoon each of corn starch and cream of tartar with 1/2 teaspoon of baking soda for each muffin. Actually seemed to bake even lighter than the store bought baking powders you might want to avoid.
