both are adopted from recipes by sarah carey on martha stewart's delicious website
- 3 tablespoons truvia (use 6 tablespoons of other sweetener)
- 1/4 cup cocoa
- pinch of salt
- small shot of vanilla
- 1/2 cup well chopped pecans
- 1/4 cup chocolate chips (or chopped > 60% chocolate bar)
combine above ingredients then add all the egg white and combine well but do not overmix
- one egg white
- 1 tablespoon and 1 teaspoon of another egg white
variation:
- add 1/4 cup of well chopped raisins (optional)
bake 325 --they spread a lot on the pan--makes 4 very large or 6 regular sized cookies
bake from 18 to 25 minutes--you can tell visibly when they are fully set--take them out just before they look completely done
chocolate coconut cookies
3 oz truvia (use 6 oz. if using another sweetener)
3 oz. cocoa
pinch salt
3 oz choco chips
1/4 cup almonds
4 oz coconut
combine all of the above ingredients then add
1 egg white
mix well
combine and drop 6 spoonfuls onto ungreased parchment
325 degree oven -- 12-15 minutes or until tops crack
