1/2 cup peanut butter
1/2 egg (that's one half of an egg*--see below)
little splash of vanilla < a teaspoon
mix all
divide into 8 balls & press down with fork times dipped in sugar to keep it from sticking
can be baked in cupcake liners too--slightly flatten each ball of cookie dough
bake for 8-10 minutes at 350 degrees
then could dip the edge in melted bittersweet chocolate if i need a chocolate 'fix'
*beat one whole egg and use one half of it
that's 2 tablespoons of a beaten egg

store the remaining half egg in the fridge
no longer flour free--but a couple teaspoons of coconut flour could be added
to strengthen the finished product
