the cocoa cleverly becomes 'the flour' in this recipe--
for four brownies:
half ounce of unsweetened chocolate
1/4 cup (1/2 stick) butter
3 tablespoons of truvia
1 whole egg
1 egg yolk
3/4 teaspoon of vanilla
1.5 tablespoons of cocoa
portion into four cups bake 350 degrees for 11 minutes
if you err in the baking -- under bake these
do not overbake
better served with sugar free whipped topping or whipped cream
brownie variation 1
add two light shakes of cayenne
add 3-4 hearty shakes of cinnamon
add 1/2 teaspoon instant coffee
i am addicted to the flavor of the cayenne + saigon cinnamon in my brownies
both have sensational anti-inflammatory properties
brownie variation 2
add dark chocolate chips to each portion
sometimes i take some melted unsweetened choc and add some truvia and
i pipe some diet friendly choco chips
brownie variation 3
add 2 tablespoons of ground or finely chopped dried fruit
like raisins or cherries
often i will plump the dried fruit in rum or water before chopping
