i tweaked this recipe http://paleomg.com/pumpkin-chocolate-chip-muffins/
to make 6 muffins:
1/4 c raisins
2-3 tablespoons of bourbon or fruit juice
place the raisins and liquid in coffee cup tenting the plastic wrap up over the top adhere the plastic smoothly over the rim and sides of the cup heat in microwave for 1.5 minutes |
do not unwrap--as it cools, it creates a vacuum |
draws all the liquid into the raisins |
keep covered, let cool, chop raisins, set aside--
1/3 c pumpkin puree
1/4 cup just melted butter (not hot, let cool)
1/4 cup sour cream
2 tablespoons maple syrup
2 tablespoons coconut sugar
3 well beaten eggs (200 whisks)
1/4 c sifted coconut flour
1/2 teaspoon:
- cinnamon
- baking soda
- baking powder
1/8 teaspoon:
- cloves
- ginger
1/4 teaspoon nutmeg
dash of cayenne
vanilla
1/4 to 1/2 cup chocolate chips
mix everything well--let batter sit for 30 minutes--divide into 6 -7 muffin cups
bake 350 degrees for about 33--35 minutes--you see the tops are starting to look pretty browned but let them bake--it's ok--let them cool in the cupcake pan
