'chapple' chutney

cherry apple chutney! whoo hooo


i tweaked a recipe from the Favorite Brand Name Gifts From The Kitchen book--it's a format similar to my apple salad --

in 3 T of oil start sauteing:
  • 2 chopped onions
  • 1 tablespoon  fresh grated ginger (no substitute)
  • 1/4 teaspoon red pepper flakes
while you prepare and add:
  • 1/3 cup dried cherries
  • 1 tablespoon sugar (1.5 teaspoon truvia, stevia etc.)
  • 1/4 teaspoon salt
  • 1 cup liquid (water, broth, wine, fruit juice or combination)
cook five minutes then add:
  • 1 chopped apple
cover & cook  6-8 mins until the apple gets tender--i like to leave it in the pot with the fire off and the cover on for 15-mins--it will keep cooking and it gets all vintage looking browned--

stir together in separate mixture:
  • 1 teaspoon cornstarch in  tablespoon water
stir into apple mixture-- boil softly for two minutes--turn off fire

stir in:
  • nice dash of balsamic vinegar
  • tablespoon of butter
wow this is good with ham and pork but i eat it on toast--so good--great on a cold morning--has great blend of nice heat from the ginger and pepper flakes with soft sweet fruitiness --

last time i put in a nice teaspoon of basil too--but i think everything hinges on the fresh ginger--i'd really like to add in mega doses of cinnamon but i get that in the apple salad and elsewhere so i keep this as is--cherries are recommended for arthritis peeps too--like who really needs an excuse? lol


while it's not known for it's good looks it makes up for it in warmth and flavor
better than jelly
and i usually use those 100 calorie round bread things
