gluten light sugar light molton lava cake for two




i took a popular formulation like this one:


and this is what i got for two individual size cakes:

  • 2 oz bittersweet ghirardelli chocolate
  • 4 T butter
  • 1 T plus 1 t sweet leaf brand sugar leaf sweetener*  -- (or 1/4 cup sugar or 2T truvia)
  • 1 whole egg
  • 1 egg yolk
  • 3 T gluten free all purpose flour ( or any all purpose flour)
  • couple shakes of cinnamon (optional)
  • vanilla (optional)
  • nice T of spiced rum (optional)
  • 1/4 t orange zest (optional) rub between your fingers w/sweetener to release the orange oil

softly melt the choc & butter while you get the eggs beaten well--whisked all together--baked in two ramekins at 415-420 degrees for 9.5 mins--should be soft to the touch on top

*30 sugar calories per serving plus there's sugar in the chocolate




but in the whole scheme of maintaining my weight--this is once in a blue moon party food ;)
