better brownies!

better than my other recipe ;)

i tweaked this recipe from the "favorite brand name gluten free 3 books in 1"

1/4 cup raisins
2 tablespoons of rum or orange juice

place raisins & liquid in coffee cup and tent a piece of plastic wrap over the top attaching it well to the
rim & sides of the cup--microwave for 90 seconds --do not unwrap -- let it cool --chop raisins

creates a nifty vacuum 

pulling all the liquid into the raisins 

1 beaten egg
2 tablespoons of cornstarch
2 tablespoons of brown rice flour
1/2 teaspoon baking soda
1/4 cup cocoa powder
pinch salt
2-3 tablespoons sweet leaf brand sugar leaf  blend
(or 1/4 cup truvia or 1/2 cup other sweetener)
4 tablespoons melted butter
1/4 cup chopped dark chocolate or chocolate chips

bake in filled mini muffin cups for 11 minutes at 350 degrees

makes 8-9 mini muffins

can't be beat with sugar free cool whip--oh my!
